Blackjack Brewing Company

Blackjack Brewing Company is a startup brewery located in Raleigh, NC. I took the liberty of creating five 22oz bomber bottles to show case a few ales that I created for the brewery. The ales were created around famous pirates and pirate culture to coincide with the theme of the brewery. I began with a high gravity imperial stout “Edward Teach” more popularly known as Blackbeard. Most North Carolinians can tell you tales of how Blackbeard ran the coast of North Carolina and captured any ship in sight. This imperial stout is as black as his beard and loaded with inimitable flavors of chocolate- covered caramel and coffee. This stout is the ultimate celebration of dark malts and boundary-stretching beer. Along with this imperial stout came a special limited batch of barrel aged Edward Teach. Aged in bourbon barrels for nearly a year this stout offers a flavor profile unlike any of its predecessors. After my stout I developed highly lucrative Double India Pale Ale
“Adventure Galley”.  Adventure Galley was an English sailing ship captained by the ruthless pirate William Kidd. This IPA starts with six different hop varieties with a massive dry hop culmination of Simcoe hops. These Pacific Northwest varieties contribute a pungent blend of grape fruit, stone fruit, and floral notes. Next up in the Blackjack repertoire is my take on the infamous Belgian Tripel  “Black Sam”.  The design captures the very popular skull and crossbones jolly roger that flew high on Black Sam Bellamy’s ship. Black Sam Belgian Tripel is a testament to the skill brewer-monks who created this style of ale. Tripels play tricks on the senses-at first glance they appear delicate and simple, but in reality, the golden color and mild appearance conceal a wealth of complex flavors. My Tripel has toasty malt sweetness that is balanced by reserved floral hop notes and complemented by Belgian Abbey yeast. Last but not least on this line of heavy hitters is my full flavor amber ale “Sunken Treasure”. Sunken Treasure is evenly balances a mixture of toasted grain and light caramel notes with a range of floral, citrus and herbal hop notes, capped by a clean bitterness. This balance of flavors makes this amber ale quite versatile as a food pairing option, not to mention being rather tasty in its own right. Weather serving as a jumping point to other styles or as a familiar standby, Sunken Treasure is central to Blackjack’s Portfolio.
