Salsa Macha
Salsa Macha is a spicy Mexican sauce originating from Veracruz on the east coast. It's made from corn oil, dried peppers (Chile de Árbol and dried Morita peppers), garlic, sesame seeds, and salt. Due to the absence of tomatoes and the use of dried peppers, its flavor profile is very distinct, almost resembling pesto more than traditional salsa. Moreover, the sauce has a much longer shelf life compared to salsa made from fresh peppers or tomatoes.
