Dating back to the 13th century Parmigiano Reggiano was born deep within the Appennine Mountains in the Reggio Emilia region. Its tradition still remains, as true Parmigiano Reggiano can only come from this exact area, embedded in the cheese itself we can see its topographic DNA when cracking open a beautiful 36-month-old wheel.
Appennino Interiore is meant to represent this exact feeling every time we enjoy a delicious Rissotto or Cacio e Pepe, wearing the detailed topography right on its skin.
Keeping with the tradition of Parmigiano Reggiano production of Zero Waste, Appennino Interiore is made from a food-grade biodegradable resin/Linen composite that utilizes discarded linen cheesecloth from the cheese production, adding this to a list of already recycled and upcycled by-products of Parmigiano Reggiano production.
