Edwin Hammond Meredith's profile

Common Vegan Substitutes for Animal-Derived Ingredients

Building upon a lifelong interest in cooking, Edwin Hammond Meredith studied German cuisine and Japanese cuisine through mentorships with successful chefs. Edwin Hammond Meredith personally follows a largely vegan diet.

People who adhere to a vegan diet do not consume any meat, dairy, or other animal-derived products. However, many recipes require ingredients such as eggs, milk, or cheese.

Nearly all of these products can be replaced with vegan options. For example, the liquid contained in canned legumes, known as aquafaba, can replicate the emulsifying and thickening properties of egg whites.

Plant- and nut-derived milk can serve as substitutes for cow’s milk. Coconut milk can also replace creams and yogurts. Vegetables such as eggplant, mushrooms, and cauliflower can function as meat substitutes in many dishes.

Fermented products, such as tofu and tempeh, are also popular meat replacements. Many of these substitutes also provide important nutrients, such as protein, B vitamins, and essential amino acids.
