Super Easy Baby Back Ribs

You don’t even need to know how to BBQ with this super simple recipe for mouth-watering charred ribs. With just three ingredients, these charred ribs are simply drop-dead delicious, and can put the slow-cooked fall-off-the-bone variety to shame. In just 15 minutes, these ribs will develop a crispy crust as they grill on each side. Despite the incredibly short list of ingredients, these ribs are still abundantly juicy and flavorful, due to the rib’s high-fat content.
So let’s get cooking!
Ingredients
3 lb. (1–2 racks) of baby back pork ribs
Freshly ground pepper and kosher salt
Recipe Prep
Let the ribs sit out for 30 minutes, so that they’ll be at room temperature. Cut the meat between the rib bones into 2 to 3-rib pieces. Pat the ribs dry with paper towels, then season them generously on both sides with salt and pepper. (Approximately 1-1½ tsp. kosher salt for every 1 lb. Of ribs. Be sure to check the label on the package before you throw it away for the weight).
Prepare either a charcoal or a gas grill set to medium heat. ( Put your hand 5″ above the grill in order to see if the grill is at medium heat; if you can hold your hand there for 7–8 seconds before it gets too hot and you need to move it away to avoid being burned, it’s a medium heat.)
Grill the ribs bone side down until they reach a deep, crispy golden brown; this will take approximately 15 minutes. Then turn ribs over and grill the other side until the ribs are crispy and golden brown. That will take another 15 minutes.
When all of your ribs are done, cut them between the bones into single ribs. Place them on a nice platter and serve with an ice-cold beer. Nice side dishes to go with these crispy, delicious ribs are fresh, crispy celery sticks and crunchy French baguettes with lots of butter, or you could go with grilled potatoes or vegetables shish-kabob.
