While working at Positivity Branding in Amsterdam I had the fortune to work on several projects for Brouwerij't IJ,

'The third beer that we developed together with the chefs of two-star restaurant Ciel Bleu. Arjan Speelman and Onno Kokmeijer again came up with very tasty suggestions. This time it resulted in a Double IPA with Asian citrus fruit. We added Sudachi, a Japanese lime-like, and Buddha's Hand, a strange-looking but excellent-tasting Asian fruit.
The juice and oils from the Eastern fruit provide a slightly tropical, subtle extra layer of taste. It coincides nicely with the soft hopsiness of this beer, which gradually comes through nicely.
Centennial and Chinook hops went into the kettles during the boil. For an extra layer of citrus we hoped this double IPA with Galaxy. This hop package results in a remarkably soft bitterness. Together with the citrus fruit, this ensures a nice layering despite the light body of this beer.
A treacherously accessible double IPA that makes you easily forget its 7.4%.'
