This is a street butcher, she is not a trained blockman, has no license to trade and hygene is unheard of. She has refridgeration of any sort.
The smell was awful and I watched over three days as she put the same cuts until there was very little left, the meat was wrapped in brown paper every night and put in a shopping trolley over night.
The following images are from a registered Abattoir outside iMonti, the city in which I live. The level of hygene was superb, the meat was regulated and their quality control of the highest order.

I was commissioned to shoot a local abattoir in the Eastern Cape of South Africa.
Some of the images are very graphic, it still shocks me how many people still don't know or understand where their supermarket meat comes from.
I followed one animal from the holding pens all the way through to being packed and delivered to a local supermarket. I was deeply disturbed by what I photographed.
