What it is
The BeefZavod is a meat and fire theatre located in the building of an old factory.

Features: restaurant, a gastronomic shop and a butcher’s shop
Project area: 300 sq.m.
Seats: 100
Project Year: 2014
History
In the 1880s a carpet factory owned by a French citizen Dufaux was located at 2 Aptekarsky Avenue and in 1908-1909 the industrial buildings for the framing factory owned by merchant N.A. Friedberg were erected here and around 200 employees were working at it. In 1900 the company acquired the title of the official supplier of the Persian Shah’s court and was awarded the order of Lion and Sun.

Later the factory was purchased by engineer M.A. Otto, a great fan and connoisseur of cars. In 1917 he converted it into the body repair workshop. They were repairing automobiles and armoured cars (including those guarding Smolny).
Concept
The BeefZavod is an ambitious project which consists of a restaurant, a gastronomic shop and a butcher’s shop.

The history of this project has started with the acquisition of the cattle and professional training for the team held by the best butchers world-wide. This is the way the butcher’s shop and the BeefZavod restaurant stylized as manufacturing have come into being.

We preserved the functional consistency of the building. Evdokimov Design Studio has filled this industrial space abandoned for years with modern content, respecting its past and taking the philosophy of a meat restaurant into account.
Design
While staying inside the guest interprets the restaurant as a performance that takes place around him and makes him its participant.

This effect is created by a special arrangement of its zones.

At first guests are taken to the butcher’s shop where delicacies are on display in large cases. You can clearly see the cooking process from the dining area. All zones are open with a deliberate crossing of the flows.
A soft seating zone is located in the middle of the hall, encircled by the open kitchen with the enormous grill (specially ordered for this project) from one side, and the dry ageing room, where 12 cuts are hanging on hooks, from the other side.

The Dry Ageing Room is an exotic and bold peculiarity of our interior. Simultaneously it is an important component of the production where carcasses are being aged. It’s an impressive display case where a lot of carcasses hang, forming a perfect “selfie zone”.

Then the carcasses are taken to the butcher’s cutting room and we can watch butchers processing the meat. After that the steaks are passed to the open kitchen zone with two enormous tower grills (ТМ Grillworks).

Wine bar is located in the center of the restaurant. A special zone where you can talk to a sommelier is elevated like a stage so you can come up there.
Furniture
All furniture, decor and lights for the BeefZavod are designed specifically for this project by Evdokimov.Design Studio and are made by local manufacturers.

Elegant hand-made Italian furniture with velvet upholstery is placed in the center of the hall. It looks especially solemn in such an entourage, almost like an armchair in a cave.

Some of the tables are made of stainless steel, some - from wooden butcher blocks and those next to the dry ageing room are covered with tiles. And the table next to the grill is supported by the bright red jacks.
Details
Details and elements highlight interior eclecticism.

Basic materials of the finishing are simple: stainless steel, brass, glass, concrete, ceramics, steel.

For instance: kitchen stainless steel tanks were converted into pot holders that form unique partition walls.
You can still observe the railings for hanging carcasses (it was planned to move them this way) on the ceiling, which are now used as tracks for lights.

Absolutely gorgeous and unique chandelier which is at the heart of the whole interior was created by the Petersburg glassblowers and consists of 12 lamps weighing 15 kilograms each.
Entering behind the leather curtain guests find themselves in the lavatory which is made in the technological style. Only some brass plumbing elements give certain solemnity to the interior.
