Pineapple Upside Down Cake Recipe

Lazyman’s Pineapple Upside Down Cake

I learned this recipe from one of my college roommates.  She would make this cake every time she needed to bring a dish to a shower or BBQ because it was so easy and quick and it had so few ingredients.  When I saw what a hit it was, I decided add it to my recipe collection for future use.

While it is not the most attractive cake I have ever seen, it is delicious and my family loves it, so I make it pretty regularly.  You can also make it with apple slices and pecans or peach slices and cinnamon and it is just as easy and yummy!

Ingredients:

* Large can of chunk pineapple
* Jar of cherries
* Shredded coconut (optional)
* Yellow super moist cake mix
* 1/2 cup real butter, melted

Directions:

1. Preheat over to 350 degrees
2. Coat a glass baking dish with cooking spray (round or square)
3. Drain pineapple and arrange in the bottom of the pan, covering the whole bottom
4. Place cherries evenly in the pineapple
5. Sprinkle with coconut (optional)
6. Evenly pour the dry cake mix over the pineapple
7. Dribble the melted butter evenly over the cake mix
8. Bake for 35 to 45 minutes till it is golden brown and bubbly
9. Remove from oven and let cool for 10 minute
10. Place a platter upside down on top of the cake and holding the platter against the top of the cake (with oven mitts), flip it over
11. Gently remove the baking dish.  At this point, I must warn you, your cake may not hold together tightly. If that happens, you can leave it in the pan and serve it from there, it is just as tasty!
12. Garnish the top with coconut, cherries or whatever you like

I prefer my cakes to be round, I am old fashioned that way, but another reason I like this dish is that it is bigger and deeper than most round baking dishes and it has a flat bottom, which is critical when you are making a pineapple upside down cake.   It really is the perfect dish for so many things, I use it for green salads, baking short ribs and even for breading fried chicken, it is the perfect size for large pieces.  I use this bowl all the time!
